Coconut Carnaroli Kheer (Rice Pudding)

I have never liked rice pudding. I've had several versions of rice pudding - or kheer, as its called in Hindi. Its ubiquitous at religious ceremonies, made in the morning, left uncovered, and served, cold, mushy, gelatinous, before lunch or dinner. Most children seemed to love it. So much so that relatives gave my mother funny looks, as if she had failed in some motherly duty.
Logically, I would think that I'd like kheer/rice pudding. I love rice - I cannot go more than a day, maybe two, without eating some. You may have noticed that I like creamy, spicy sweets too. As I've grown up, I notice that I, like most people, begin to like foods I could not abide as a child. So many of us bloggers have described the experience: finding a fresher version of a once-despised vegetable, or a new technique for cooking an old-and-disliked dish. Which is why I came around to making my own version of kheer. I cut down the amount of sugar, omitted the raisins, increased the spices, and used coconut milk in addition to regular. Perhaps most significantly, I used carnaroli rice rather than a long-grained one. Carnaroli rice is similar to arborio in that they are both very short grained and starchy, with carnaroli being the shorter and plumper of the two. I believe it was that rice that made the greatest difference, for the resulting dish felt like a revelation. Because of the creamy starchiness, the rice melted into the coconut-flavored cream seamlessly, yet, the plump kernels still retained just a hint of nutty due to the firm inner center. The cream itself was  - with just the right consistently,  and delicately flavored of coconut, brightened with fiery chai-flavoring spices. I am salivating as I write, and dreaming of making some more right now. And so, as with so many other things, I think I do, after all, like rice pudding.



This recipe is so easy and fool-proof that I wish I had a super-easy label to catergorize it. Its also gluten-free, and I would imagine that you could make it vegan but using almond or soy milk instead of regular.

Coconut Kheer/Rice Pudding
3-4 smaller servings
1 3/4 cup milk
1/2 cup carnaroli rice (use arborio if you cannot find)
2 tbsp sugar, preferably raw
4 cardamom pods, seeds only, crushed
pinch of salt
1 tbsp minced candied ginger (or use 1 inch piece of a ginger if not available - see note)
9-10 ounces of coconut milk (do not use 'lite' - it is simply watered down)
optional: shredded, toasted coconut for serving
In a saucepan, combine the milk, rice, sugar, salt, and cardamom with 1 cup of water and bring to a boil. Simmer over moderate heat, stirring frequently, until the rice is tender, about 30 minutes. Stir in the coconut milk and ginger and simmer, stirring occasionally, until the rice is very tender and the liquid is thickened, about 10 minutes.
Let cool slightly, about 5-10 minutes, before spooning into bowls and serving. 
Note: If using whole ginger, remove prior to serving.
Tea pairing: Milk, rice, and coconut...I suggest a darjeeling, or possibly a light assam. Or if you like, a cup of masala chai.

I love rice pudding but hate it cold! I don't understand the serving of it cold. We always served it hot with cold vanilla ice cream on top..Yum!

I also hated a lot of things as a kid but now I love them.My mom says that our taste buds keep on evolving.However, I love kheer any form.Infact the thick the rice grain, the better I like kheer.I hv started coconut milk n flakes to my kheer recently n completely love them.Yours with ginger n spices sounds yum..my next try!

My mom always made creamy rice pudding since I was a child and I've never had it like that anywhere else. Hence, I don't like most rice puddings I've tasted. I don't make it myself. Perhaps I'll try yours :-)

the best I ever had was made for me by an Indian chef where I used to work...he made it with grated carrot, raisins and a mix of spices and served it hot or cold...it was AMAZING.

Hi Joyti! Well, I must say you are very clever with this adaptation. Carnaroli Rice and Coconut Milk would make all the difference. I love this particular rice for risottos, and it makes perfect sense that it would be amazing in rice pudding. Fabulous!

I'm a big rice pudding person, but I grew up with it in the Greek style, with cinnamon and clove. While my mom usually used whatever rice was in the pantry, I do love it with carnaroli or aborio rice. I'll have to try a bit of coconut milk, too!

I really like your version of rice pudding; especially lowering the sugar quantity and using coconut milk for that extra nutty, yummy taste. Starchy rices like arborio do make a lovelier, creamier-tasting end product. Much more pudding-like!

There's a Dutch recipe for a pie (crust is made with a sweetened yeasted dough) where the filling is rice pudding. After it's cooled, it's decorated with whipped cream. Yum! Try it sometime.

You know, I liked rice pudding as a kid, but the thought of it right now makes me jeer! It is usually super sweet. Iranians have a saffron-rice pudding that my husband loves, but again, I think it's too sweet. But coconut rice pudding sounds intriguing... I might have to try it!

This looks fantastic. I use leftover (usually black) rice for breakfast and add almonds, coconut, coconut milk, cardamom and honey. It's sweet without being desserty. I can't wait to try this, lots of similar flavors.

I've always had a soft spot for rice pudding, but I have to agree that I really see a big difference in texture and consistency when I've used arborio rice instead. I think it is a very different dessert when made with short grain rice. I've never tried it with carnaroli, I'll have to try that and see how it differs.

Isn't that interesting that some foods we did not like as a child are now one of our favourite foods.
My Mother used to often make rice pudding for dessert and it used to be hot, and with cream poured over, I loved this.
I must make a rice pudding again and thanks for sharing the recipe.

Regarding your rice pudding-our version is arroz con leche. It is sweet, and there are so many versions out there, that sometimes it does take a little tweeking to get it just right.

The way you felt about rice pudding is the way I felt about brussel sprouts. I despised the little vegetable as a child. I forgot to update my order, and one week found a pound in our farm fresh organic delivery service box. I thought I might as well at least try to cook them. I found a gourmet recipe online, and tried it. I fell in love with them. It truly is a matter sometimes of it having been prepared the *wrong way, when we were children- or at least, not to our preference. :) I completely related to the article.

Rice pudding, or a variation of it, called "Ris à l'amande" is served here in Denmark (Scandinavia) as a traditional desert on Christmas Eve.;)) It includes one whole almond that is hidden in the mix and then served. The one who finds the almond wins a gift.;)
You can imagine how much of the desert can be consumed at times until someone finally finds that almond! Thus we really can not imagine eating this at any other time than during Christmas as everyone is fed up with getting too much of it, hehe.;)

I'm not a huge fan of rice pudding too. I love rice, but sweet rice seems a little weird.

Rice pudding (with lemon) was one of my favourite "Nana sweets" as a kid and I was so excited to learn that it is a big part of childhood sweets in Germany. Here it is called Milschreis (Milk Rice). I always add only a small fraction of the sugar in comparison to the recipe, and use Sushi rice for its sticky starchy quality. Might be good with Thai sticky-rice too though.

I do not like the typical Indian Kheer either.Thought my hubby and me were the odd ones out. So I make Firni, with ground rice and the texture suits our taste better. But this is good! Yes the spice and the ginger, eps. with the different kind of rice that you used.
