Coconut Carnaroli Kheer (Rice Pudding)
>> Tuesday, March 15, 2011
I have never liked rice pudding. I've had several versions of rice pudding - or kheer, as its called in Hindi. Its ubiquitous at religious ceremonies, made in the morning, left uncovered, and served, cold, mushy, gelatinous, before lunch or dinner. Most children seemed to love it. So much so that relatives gave my mother funny looks, as if she had failed in some motherly duty.
Logically, I would think that I'd like kheer/rice pudding. I love rice - I cannot go more than a day, maybe two, without eating some. You may have noticed that I like creamy, spicy sweets too. As I've grown up, I notice that I, like most people, begin to like foods I could not abide as a child. So many of us bloggers have described the experience: finding a fresher version of a once-despised vegetable, or a new technique for cooking an old-and-disliked dish. Which is why I came around to making my own version of kheer. I cut down the amount of sugar, omitted the raisins, increased the spices, and used coconut milk in addition to regular. Perhaps most significantly, I used carnaroli rice rather than a long-grained one. Carnaroli rice is similar to arborio in that they are both very short grained and starchy, with carnaroli being the shorter and plumper of the two. I believe it was that rice that made the greatest difference, for the resulting dish felt like a revelation. Because of the creamy starchiness, the rice melted into the coconut-flavored cream seamlessly, yet, the plump kernels still retained just a hint of nutty due to the firm inner center. The cream itself was - with just the right consistently, and delicately flavored of coconut, brightened with fiery chai-flavoring spices. I am salivating as I write, and dreaming of making some more right now. And so, as with so many other things, I think I do, after all, like rice pudding.
This recipe is so easy and fool-proof that I wish I had a super-easy label to catergorize it. Its also gluten-free, and I would imagine that you could make it vegan but using almond or soy milk instead of regular.
Coconut Kheer/Rice Pudding
3-4 smaller servings
1 3/4 cup milk
1/2 cup carnaroli rice (use arborio if you cannot find)
2 tbsp sugar, preferably raw
4 cardamom pods, seeds only, crushed
pinch of salt
1 tbsp minced candied ginger (or use 1 inch piece of a ginger if not available - see note)
9-10 ounces of coconut milk (do not use 'lite' - it is simply watered down)
optional: shredded, toasted coconut for serving
In a saucepan, combine the milk, rice, sugar, salt, and cardamom with 1 cup of water and bring to a boil. Simmer over moderate heat, stirring frequently, until the rice is tender, about 30 minutes. Stir in the coconut milk and ginger and simmer, stirring occasionally, until the rice is very tender and the liquid is thickened, about 10 minutes.
Let cool slightly, about 5-10 minutes, before spooning into bowls and serving.
Note: If using whole ginger, remove prior to serving.
Tea pairing: Milk, rice, and coconut...I suggest a darjeeling, or possibly a light assam. Or if you like, a cup of masala chai.

since a few weeks i`m eating rice like this every day! i say milk rice. just with a little salt, cinnamon and cardamom. it is a taste of bliss to me..
I'm a huge fan of my grandma's rice pudding, but I think this one could give hers a run for its money.
I have never had an aversion to rice pudding - in fact I've always loved it! Now I am longing for some, I haven't had any in a while. I would really love to try yours.
I love rice pudding but hate it cold! I don't understand the serving of it cold. We always served it hot with cold vanilla ice cream on top..Yum!
This recipe sounds wonderful too!!
I love your photos as always!!
I like rice pudding with chocolate, which is what we have here in the Philippines, it's called champorado. I think I will try your recipe soon because I was salivating too while reading your post!
ahhh i love rice pudding! :)
thanks for the blog comment btw.
I also hated a lot of things as a kid but now I love them.My mom says that our taste buds keep on evolving. However, I love kheer any form.Infact the thick the rice grain, the better I like kheer.I hv started coconut milk n flakes to my kheer recently n completely love them.Yours with ginger n spices sounds yum..my next try!
I've never particularly taken to rice pudding either. But I do love chai and rice so this might be worth a try!
I can't believe you never used to like rice pudding! I think it was a favorite of mine as a child. I LOVE how you exoticized this with cardamom and ginger. *loves*
Cardamom and coconut...I'm already sold. I've never made rice pudding before, but now I'm eager to try! Thanks for sharing with me tonight. Visiting your blog brings a smile to my face, week after week. I hope you have a fabulous Wednesday!
Adore Rice Pudding and this sounds just yummy!!

Definitely rice does make a lot of difference for Kheer, be it the thickness or creamy consistency. Have never used this Cararoli for kheer, your version looks perfect to give a try, Jyoti!
This sounds absolutely heavenly on a rainy day like this. Thank you for sharing!
My mom always made creamy rice pudding since I was a child and I've never had it like that anywhere else. Hence, I don't like most rice puddings I've tasted. I don't make it myself. Perhaps I'll try yours :-)
I have great memories of eating rice pudding as a child with my family. Hot or cold, its always amazing.

i had rice pudding for the first time at an indian buffet a while ago. it was delicious!
I love rice but cannot do rice pudding where my British husband absolutely adores it. I will be trying your recipe so thank you for sharing!
I have always liked rice pudding but this sounds extra special with the added ginger and coconut. Yum yum. Diane
Yummo! I love almost any rice pudding with spices in it so this one is going on my must try list for the weekend. Addition of ginger? Clever!
Thats soo delicious and inviting pudding..
I'm fairly new to rice pudding myself. I like the sound of your version! :)
Lovely images and beautiful food. So glad you stopped in at my blog as now I have found you : ) And I love rice pudding!! Have a great day.

That looks very tempting! Thanks for sharing!
I adore rice pudding, and the addition of chai spices and coconut milk would send me over the edge into fat pants heaven. Thank you for sharing--this is cozy eatin' at its best!
im all for shorter and plumper rice too for my rice pudding!
love how you found 'your' version of it...a more flavoursome version with the spices and less sugar! yummmm!
there are also many dishes that i grew to like over time...almost like when you're tasting it for the first time!
What a classic and well delicious too.
Lovely clicks ♥
i'm such a fan of rice pudding, so this looks delicious! i've never had it with coconut milk before, but that actually sounds like a better way to make it. i love anything coconut lately!
Love the addition of cardamom & ginger to this one.
Your changes make me want to try it again! A friend taught me to make kheer once and I can't tell you it was my favorite! But I think your additions would make it really yummy! Thank you, as always, for sharing your culinary creativity!
Betty
oh my goodness!! this looks sooo refreshing and delicious! i must try it sometime!!
looks prefect and wonderful..
I've never seen this type before but looks deliciously yummy to me but then again I love any sort of rice pudding :)
I have never made it but love it. My mom used to make it when I was young.
I've never been a fan of rice pudding either but you might have convinced me to give it another go. I love the sound of adding coconut milk- seems so decadent!
This looks absolutely beautiful. I am always looking for unique dessert ideas and this - I am bookmarking! Thank you.
What an innovative version of kheer! or maybe is it is a sweet risotto with Indian spices? It looks really delicious and coconut milk is making it even more tempting!
Your rice pudding reminds me of my mom's version (though she is using a different recipe). Yours looks so comforting and flavourful!
This looks so good and I'm a big fan of super-easy.
Sounds delicious!! Loving the coconut milk detail!

I've never liked rice pudding either. I guess I've associated it too much with baby food. But your description has me sold -- as long as I can use arborio rice. Bookmarked!
Delicious kheer, adding candied ginger sounds great..yummy
Ohhh I love rice pudding,
the best I ever had was made for me by an Indian chef where I used to work...he made it with grated carrot, raisins and a mix of spices and served it hot or cold...it was AMAZING.
Hi Joyti! Well, I must say you are very clever with this adaptation. Carnaroli Rice and Coconut Milk would make all the difference. I love this particular rice for risottos, and it makes perfect sense that it would be amazing in rice pudding. Fabulous!
I'm not sure what else I can say except YUM. Thank you for another delicious sounding gluten-free treat :)!!
I love latin american rice pudding- the cinnamon stick flavors against the stark white rice is beautiful and delicious! this version looks pretty fantastic as well!

I, too, cannot go more than a day without rice since I'm Filipina! But, this rice pudding looks dreamy! I'll have to try it!
i've never liked rice pudding either. taking out the raisins and making sure the consistency isn't too mushy would help a lot. still, i'm not sure there's any saving it for me. :)
Kheer looks dleicious, I love kheer,
Loved the new version of Kheer...Wonderfully tempting description...

i have an amazing microwave recipe for rice pudding, which i adore. but the thought of adding coconut milk and cardamom is making my mouth water already. this looks delicious!
xo
OMG YUM!
I am making this for sure! And thank you so much for your comment on my blog! ♥
Lovely recipe and sounds fantastic...I love rice too, so rice pudding is always a favorite.
Love, love, love kheer! Or rice pudding of any sort. Love the ginger too...
I made rice ppudding for the first time recently and was rather shocked to find I preferred the tinned version!!
Your's sounds as though it could change my mind. I love all the little extras you've added to make it extra-special.
Sarahx
I'm a big rice pudding person, but I grew up with it in the Greek style, with cinnamon and clove. While my mom usually used whatever rice was in the pantry, I do love it with carnaroli or aborio rice. I'll have to try a bit of coconut milk, too!
I love pudding especially my moms! She taught me how to make it but if I crave pudding I can't eat it cause I'm in college and live in a dorm.

I have to tell you I love rice pudding and your version sounds so good that I am keeping this recipe.
Rita
I can't stand rice pudding but will give yours a try before I give up completely.
I've never been a huge fan of rice pudding either, but my husband adores it, and this recipe sounds delish!
The photo of the spices is beautiful!

Hey thanks for the visit :)
I don't like rice pudding, but it could be because I had some really bad ones in the past!
I really like your version of rice pudding; especially lowering the sugar quantity and using coconut milk for that extra nutty, yummy taste. Starchy rices like arborio do make a lovelier, creamier-tasting end product. Much more pudding-like!
P.S. Thanks for the great comment about Lent you left on my blog. I truly appreciated your unique perspective...it resonated :-)
Mmm I adore kheer. The spices and nuts in many Indian desserts make them a real treat for the tastebuds :).
Looks yummilious.
hi joyti, thank you for visiting my blog. Here in the Philippines, we have different kinds of rice pudding. There's chocolate rice pudding (Champorado) and glutinous/sweet rice pudding (Biko), among others. :)
ahhh ingredients are not complicated at all!
You have a lovely blog! I especially like the way you take pictures, simply beautiful!
Thank you so much for stopping by my blog.
My favoritte part of eating out at our local Indian restaurant is the rice pudding. Your version sounds lovely.
I saw this post the other day and had every intention of leaving a comment and then lost focus somehow. oh, that's not an unusual thing.
but when you left a comment on my blog, well now there's another reason to visit again. and I love rice pudding. I have fond memories of making it for my grandfather after grandma died. It was one of his favorites, and he liked it with raisins. this recipe seems it would have delicious flavors, a definite variation on what I'm accustomed to and I'm intrigued. thanks for visiting my blog, I love when that happens, and I hope you have a really great day.
Thanks so much for stopping by my blog and leaving a comment. Your rice pudding recipe sounds delicious. I've only used cinnamon in rice puddings but I like your idea of using cardamom and ginger.
There's a Dutch recipe for a pie (crust is made with a sweetened yeasted dough) where the filling is rice pudding. After it's cooled, it's decorated with whipped cream. Yum! Try it sometime.
i love rice pudding... never thought about doing it with coconut... delicious!
I like rice pudding and have always wanted to try a recipe like this. Thanks for sharing. P.S I have the same plates as you!
mmm. this looks+sounds so different than anything I've ever tried. I do love coconut though :)
Honestly i'm not a fan of Kheer coz of extra sweetness and nuts in it, but ur jazzed uo version sounds great! and carnaroli rice is very interesting though my mum say that basmathi gives a additional flavour would love to try urs sometime!
yums!!!
Kheer looks yummy..adding ginger to kheer is new to me..
Must be very falvorful...
This sounds so good that my sweet teeth are just aching for some..
this coconut rice look wonderful! gloria
Oh my gosh, thanks for the comment... I feel like I just won the jackpot by finding your blog! I've been cooking so many new recipes lately... I'm in heaven.
LOVE IT!
i haven't had much rice pudding in the past, but this looks heavenly. i will definitely be giving it a try.
I can relate to your post; I did not like rice pudding or any pudding as a child (maybe because it was made of powdered milk?); but now of course, I love them!
Wow! I've always loved rice pudding actually and I love coconut so this is heaven on earth for me :)
You know, I liked rice pudding as a kid, but the thought of it right now makes me jeer! It is usually super sweet. Iranians have a saffron-rice pudding that my husband loves, but again, I think it's too sweet. But coconut rice pudding sounds intriguing... I might have to try it!
I love rice pudding now, but as a child I preferred chocolate!
I remember having my mom's rice pudding growing up, but this one sounds even better!
This looks fantastic. I use leftover (usually black) rice for breakfast and add almonds, coconut, coconut milk, cardamom and honey. It's sweet without being desserty. I can't wait to try this, lots of similar flavors.
I've always had a soft spot for rice pudding, but I have to agree that I really see a big difference in texture and consistency when I've used arborio rice instead. I think it is a very different dessert when made with short grain rice. I've never tried it with carnaroli, I'll have to try that and see how it differs.
i love rice puddings. my friends think i'm weird because rice isn't supposed to be sweet or made into a pudding blah blah but whatever, i like rice pudding :)
oh and thanks for your song suggestions. duh bob dylan, i knew i left someone out haha
Isn't that interesting that some foods we did not like as a child are now one of our favourite foods.
My Mother used to often make rice pudding for dessert and it used to be hot, and with cream poured over, I loved this.
I must make a rice pudding again and thanks for sharing the recipe.
Happy weekend
Hugs
Carolyn
YUMMY - I love this, can't wait to try and make it at home. Thanks for the lovely comment you left on my blog, I will follow you as I love what you do here, hope you follow me too;O)
Happy weekend
A xx
I haven't tried it with ginger :) my husband really loves kheer, so I make it sometimes
This sounds wonderful. My Mom used to make rice pudding for me, and it was the best. I have the recipe, but it never tastes as good as when she made it. Will definitely be trying this one! Thank you so much for sharing, and I wish you a beautiful weekend!
I love rice pudding. I can't wait to try this version!!
Thanks so much for having visited my blog. :)
Regarding your rice pudding-our version is arroz con leche. It is sweet, and there are so many versions out there, that sometimes it does take a little tweeking to get it just right.
The way you felt about rice pudding is the way I felt about brussel sprouts. I despised the little vegetable as a child. I forgot to update my order, and one week found a pound in our farm fresh organic delivery service box. I thought I might as well at least try to cook them. I found a gourmet recipe online, and tried it. I fell in love with them. It truly is a matter sometimes of it having been prepared the *wrong way, when we were children- or at least, not to our preference. :) I completely related to the article.
Hope you have a beautiful weekend as well. :)

I love rice pudding and think coconut rice pudding would be a huge hit in my house. Such nice flavors in your recipe as well!
I so love to rediscover foods I once thought I disliked :) I am so pleased you tried to like rice pudding by making it yourself, as now I can benefit from a gorgeous recipe :) So interesting that the use of Carnaroli rice made such a difference! Fabulous.

my favorite foods in life include: pudding and coconut. combining them together sounds like a dream come true! cannot wait to try this.
Kheer, one of my all time favorite dessert..The coconut milk and ginger is a creative addition that really enhanced the flavor.
my mouth is watering as I read this! I've been looking for something NEW to give to my little one (as well as myself). Thanks for your sweet comment. I am now following along with you, can not wait for more recipes to come :)
That looks super delicious. I would eat that right now and I just had dinner!
I LOVE rice pudding! How could I not, since my mom always makes it for me :) Thank you for the added twist to the original recipe!
♥

i gotta say, i love rice and i love pudding and then add some coconut in the mix and i'm hooked 100%! nice post lades; thanks so much for visiting me. your blog is full of goodness. ♥
Delicious kheer, innovative dessert and nice twist to the mundane rice kheer!

What an absolutely beautiful rice pudding or kheer! I can see how carnaroli rice would work better than long grain too :)
As always, I love the words you write and the little story you shared about when you were young. I have always loved rice pudding but it's never been my favourite...however, I feel that this would be so divine and wonderful! That coconut milk sounds perfect mixed with the spices you used. I would love to try it sometime!
Cute and simple photos that I love!
Happy weekend, darling! Enjoy it by perhaps having some more of this great stuff♥

Can you believe I have never tried rice pudding? This looks delicious and makes me want to give it a shot.
Thanks for leaving a comment on my blog. Your blog is beautiful! Glad to have found it. I am a huge rice pudding fan, as my grandmother used to make a Jewish one (and I make it too) that has cinnamon and raisins and a creamy top while the rest is dense with rice. Lately I have been envisioning one with coconut milk and cardamom, and this sounds just like what I had in mind. Can't wait to refer to your recipe when I'm ready to make it!
I have always wanted to try rice puddings!
This one looks particularly tasty!
Yas
That sounds good. My husband has recently discovered how good coconut milk in Oatmeal is. I will have to share this recipee with him.
Thanks for the visit.
Kat
We eat something similar in Norway but we call it 'rice porridge'. Looks almost identical but we don't have any of the spices in - just a red berry sauce on top :)
Rice pudding, or a variation of it, called "Ris à l'amande" is served here in Denmark (Scandinavia) as a traditional desert on Christmas Eve.;)) It includes one whole almond that is hidden in the mix and then served. The one who finds the almond wins a gift.;)
You can imagine how much of the desert can be consumed at times until someone finally finds that almond! Thus we really can not imagine eating this at any other time than during Christmas as everyone is fed up with getting too much of it, hehe.;)
xoxo
Wonderful preparations. I would love to taste it.
I love rice and love to try your recipe. Thank you for sharing.
beautiful photos, and thanks for sharing this recipe. will save this in my favorite post for when i'm making the boyfriend dinner.
hope you're enjoying your weekend
x
I love kheer, absolutely... But I can understand how you feel about not liking it since I do not like gajar ka halwa and everybody is like, what!!
Wish you a very Happy Holi:-)
This sounds really good, I'm going to try making it with soy milk (vegan). I love rice pudding too, it reminds me of my mom. Thanks
I've always wanted to try rice pudding but haven't gotten around to it! this sounds good :)
I'm not a huge fan of rice pudding too. I love rice, but sweet rice seems a little weird.
I've never been a fan of rice pudding but I sure do like the look of it in your photos;-)
I have always enjoyed rice pudding although I have never attempted to make it. Great post!
I LOVE rice pudding, though have never made it. This sounds absolutely delicious! Thanks for sharing! YUM!!!

This sounds like a wonderful dessert. I love the combination of flavors you used
Thank you for visiting my site, and sharing your wonderful thoughts and words!
My mom makes some of the best desserts in the world, and is always on the hunt to do something more with rice. I'm definitely sharing this recipe with her. Thanks!
Beautiful post, I love rice pudding and want to try this recipe because I also love coconut :)
Yummmm! I love rice pudding, any type, any temperature! But this one sounds especially lovely :)
The flavors in this sound wonderful...and foolproof? Thank-you!!!
You had me at
coconut milk!!!
I love rice pudding,
but this sounds
even better than
the run of the
mill recipe. Love
how you took it
and made it YOURS : )
xx Suzanne
Ooo I think my son would love this!
Thank you for giving me some ideas for rice alternatives!
:) Anna
Rice pudding (with lemon) was one of my favourite "Nana sweets" as a kid and I was so excited to learn that it is a big part of childhood sweets in Germany. Here it is called Milschreis (Milk Rice). I always add only a small fraction of the sugar in comparison to the recipe, and use Sushi rice for its sticky starchy quality. Might be good with Thai sticky-rice too though.
I've never met a rice pudding I didn't like, so this looks very appealing to me!
I do not like the typical Indian Kheer either.Thought my hubby and me were the odd ones out. So I make Firni, with ground rice and the texture suits our taste better. But this is good! Yes the spice and the ginger, eps. with the different kind of rice that you used.
